Tinkerdwagon is watching the clock today; roasting a rack of ribs for Easter Brunch. This will be supported by my usual steamed mixed veggies and some steamed broccoli, as well as a big bowl of smashed topatoes with scram gravy, provided there are sufficient scram from the roast. mnem Aloha , That is one of my all time favorite's and always make it but I really do not care for all ... The Sticky Barbeque Sauces all over it. I just use ... Garlic Salt , some other .... Light Spices and drop it in ..... The Oven or on Top The Grill. Never cared for ...... BBQ Sauces all my life. Just make that Dry and Crispy then go for it...... . I even have a couple of them in .... The Freezer right now and always do and for this coming week..... .

"Scram gravy" is a southern slang; it just means a quick knock-together gravy from the meat drippings. You pour the juices out the bottom of the pan into a pot and add a little flour and season to taste, cook/stir/cook/stir to turn the mess into a gravy. I thought "smashed topatoes" was pretty universally recognized, though... mnem you'll have to excuse me... I hear a carrot cake calling my name...

Grand-dad was a muleskinner from Arkansas; I assume it came from his side of the family. Very much the epitome of "picturesque speech", he was. I guess what makes it "scram gravy" is it's something you can whip out real quick just after you pull the meat out of the oven before it goes out to the table. Gravies and sauces are definitely "a whole thing"; so much so there's a special chef just for them. Just ask Emiril. mnem "Jeezus H Christ a-hoppin' on a pogo stick, boy do you snore! Oh, now I get it. I thought you said "Southern" but you must have meant "Western".
