I think most of us would agree that the SKX007 is a current production classic, and certainly a future collectible. What do we know about it's production history? Specifically, if I wanted to get a first month/year production example, when would it have been made? Do we know about any production variations besides movement upgrades?

Indeed mate, but did the 7548 initiate the basic shape ? I think there a several key variations, albeit minor, throughout the basic design. To illustrate the differences in case shape, particularly in the lugs and crown guard areas I took this completely rubbish photo, on the left is the 007, 7548 in the middle and 7C43 on the right.
