More dry rubbing of pork for me. Used a mix of Indonesian spices & dried crushed chillies. Long and low in the oven. Turned every hour and basted with the juices. Little bit salty but tastes great with some home made Jack Daniels BBQ.

Saturday night was Spiced ground Turkey tacos served with re-fried beans and Spanish rice. Looks yummy! I remember going to a place in downtown San Jose called La Tacoria(sp?) that served the absolute best custom built soft tacos you can imaging. Whenever I could make it there, I always had a full platter and did a take out for later! I just Googled it...damn it's gone

Tonights Veterans Day meal was: Blackened Rock Cod with a side of Mango topping, Baked potato that could easily have fed 2 people and some grilled Zuccini. I started off with a small Ceasar salad!

For our winter dinner tonight, I'm making a slow cooked rabbit casserole. Here's hopping it's a hit and not an elmer fudd.

Perhaps a bit OT but this year for Thanksgiving meal we are going to do something completely different. We are going with a Mexican theme..... Nether of us really care for the traditional turkey and it takes long to cook and to clean up later on and 1/2 of it never get eaten so we are going with: Spicy ground Turkey tacos, homemade Tamales (3 different kinds) re-fried beans, Spanish rice, olives, and all the good trimmings! ALL will be eaten and no toss aways afterwards. Cherry pie too!

Too many people eat the "traditional" stuffed Turkey meal with cranberry sauce etc etc and etc. Just not for us anymore! This years meal will be tons easier to prepare and tons less kitchen clean up time!
