When's that foreclosed house next door to you going up for sale so I can move in and knock on your door at dinner time every night I think I can postpone moving to MS for a year or 2 to move to your hood. I'll be the neighbor from hell (for the rest of the neighborhood since we are cool bro ) with the 4 rusty cars in the driveway and 3 loud bikes racing up and down the block at 3 AM and 40oz bottles in the front yard.

You know it! Christmas gifts from Omaha Steaks. VERY moist. They are Cryovaced (sp?) and can last in the freezer for probably over a year and still be moist when cooked. The chops and steaks are better than their stuffed chicken breasts which I also received. Last night's dinner was from a chain restuarant... Lawry's.

Do you see that bone on that empty plate? At one time it was connected to a 10oz pork chop. The alleged pork chop was "phorque" tender! I washed it down with a 10 YO Scotch!!

No char... I made them on the Cusinart Griddler. I tend to kill steaks when I grill them. I'm much better with chicken.

I can't have a grill where I live, so I make do with a cast iron pan.
If the steak is about an inch thick: Preheat oven with cast iron pan inside to 500° Fahrenheit. Brush a little oil on the steak and season both sides with salt and pepper Remove pan from oven and place on high heat Sear each side for about 30 seconds Pop in the oven for about 2.5 minutes on each side for medium rare.

There's a burger hiding under all those Hatch Chilies and cheese. That is some sort of homemade bread that I lightly toasted. Not bad.

My Dad on the rare occasion we Grilled put his steak on the Grille just long enough to let it change color then he flipped it. At most is was a total time of about a minute! He liked it when the blood was still dripping! Mom and I almost vomited but never said a word to him. We both liked our meat WELL done and especially the hot dogs............BURNT to a crisp. I can now tolerarte meduim as long as no blood is flowing! IF it has a teeny bit of blood ............back on to the grille it goes!
