How hard is it, say after a hand swap, for a trained maker to ensure factory water tightness when reassembling watch? Specifically on a SBDX017 and a SRP77x?

Simple, he/she just have to have a pressure testing jig. Exactly. Even if you replaced the gaskets every time without a pressure test you can't be guaranteed that they seated properly or that they weren't defective from the factory.
